This is a recipe I recently created to smear on my burger. But then I realized how amazing it also tastes on chicken, salmon, pork chops, cauliflower, broccoli, bell peppers, etc.
I took a vintage recipe from an old church cookbook and updated it to become a modern recipe.
This recipe helps eliminate food waste (since most people discard the beetroot’s stems) while also creating a uniquely tasty and simple side-dish filled with flavors and nutrients. It’s a total win! This dish is a unique family recipe that my grandpa (who lived until he was 100 years old) absolutely adored!
All summer long my family absolutely loves a simple salad of thin sliced tomatoes and cucumbers, because is fresh and pretty much can be eaten with any dish. But if you are busy person as I am, I am sure you don’t have time to make this salad everyday.

Years ago I had a very extensive and bountiful herb garden and this recipe started out as a simple herb quiche for a brunch I was hosting, but the “gluten free’s” and the “cutting down on carbers” won out so it became a frittata. Then someone suggested a salad might be nice to add to the menu, and someone else suggested making a breakfast pizza so I just combined all three into this dish. Frittatas however traditionally have cheese in them or on them as do pizzas. I had no cheese! So I used Mayonnaise and a star was born! Enjoy!
