Zucchini Hummus

About the dish: I am a huge fan of hummus, but I don't always love making it at home, because it takes a little bit of effort to get it as smooth as restaurant quality hummus. By swapping the chickpeas with raw zucchini, this hummus becomes so creamy, so light and refreshing, and comes together so fast, it's my absolute favorite way to make hummus at home!

Serves: 6

Estimated Time: Under 30 Minutes

Ingredients:

2 cups small diced zucchini

6 tbsp tahini

3 tbsp extra virgin olive oil

1-2 tbsp lemon juice

3/4 tsp cumin

3-4 cloves garlic

salt and pepper to taste

Preparation:

Place all ingredients in a blender, and puree to desired consistency.
