Zucchini Hummus

Submitted by Ben Mastracco

About the cook: I'm a nutrition and food coach living in San Diego California, and my goal is to spread the joy of healthy eating! Once you start having fun in the kitchen, and seeing how delicious healthy food can be, thats when nutrition becomes easy, and that's what I try to teach with every recipe.

About the dish: I am a huge fan of hummus, but I don't always love making it at home, because it takes a little bit of effort to get it as smooth as restaurant quality hummus. By swapping the chickpeas with raw zucchini, this hummus becomes so creamy, so light and refreshing, and comes together so fast, it's my absolute favorite way to make hummus at home!
