Tara’s Peaches and Cream Cheese Kolachies

About the dish: We would stop and buy these little treats at a gas station whenever we went down south in the summer. I just didn't want to wait until then to get another one so figured out a recipe for it on my own.

Ingredients:

• DOUGH
• 1 cup lukewarm mashed potatoes
• 1 pkg yeast
• 2/3 cup shortening
• 1½ cup lukewarm potato water
• 1 ½ tsp salt
• 2/3 sugar
• 7 cups bread flour
• 2 eggs

• FILLING
• 2-3 medium peaches
• Juice of 1/2 lemon
• 1/4 cup sugar
• ½ tsp cornstarch
• 1 pkg cream cheese softened
• 4 tbsp sugar

Preparation:

Make the dough first and let it rise while you make the peach and cream cheese filling. Recipe yields about 36 Kolachies.
DOUGH: Place the warm water and yeast in a mixing bowl and let bloom. Add shortening, salt, sugar, eggs, and slowly add flour one cup at a time and knead with dough hook roughly ten minutes. Place finished dough in well oiled bowl and cover with plastic wrap and let rise in the refrigerator for at least six hours or overnight.
FILLING: To make the filling let 1 pkg of cream cheese stand at room temp until softened and then cream together with 4 tbsp sugar. Cover and set it aside. Then wash, pit, and slice the peaches. Then place in medium saucepan with ¼ cup sugar, ½ tsp cornstarch, and the juice of half a lemon. Bring it to a gentle simmer on low to thicken for about 10 minutes (careful not to scorch the sugar) then let it cool and set it aside with the cream cheese.
DIRECTIONS:
Roll the dough out about ½ in thick on floured surface and cut into squares and let them rise for about 45 minutes at room temp on a parchment covered baking sheet while the oven preheats to 375 degrees. Once dough has risen, make thumbprint indentations in the centers of the rolls. Spoon a teaspoon of the cream cheese mixture onto it then a few slices of the peaches with a little sauce over the top. Bake at 375 degrees for 18-22 minutes until golden brown and try not to get trampled when you remove them from the oven.
