S’mores Rainbow Cake

About the dish: I make this every New Year's Day, because my youngest son, Sam, has a birthday on January 2 and always requests it.

Ingredients:

2 boxes Pillsbury Funfetti Cake Mix
3 cans Pillsbury Vanilla Marshmallow Icing
1 bag chocolate chips
1 cup graham cracker crumbs
5 different colours food colouring

Preparation:

Preheat oven to box instructions.

In a stand up mixer, prepare cake mix with egg-white-only instructions. Whip extra fluffy.

Cut 6 rounds of parchment paper and use to line baking pans.

Only fill each one halfway. To 5, add a few drops of food colouring and stir in gently.

Bake 2 at a time.

Allow each to cool completely before starting to ice and stack.

When icing is covering first layer, sprinkle first with graham cracker crumbs, and then chocolate chips. Repeat.

You may need to use bamboo skewers to stabilize cake. Toss remaining crumbs and chocolate at sides.
