Pumpkin Spice Cupcake

About the dish: My kids favorite cupcake is made with pumpkin, whole wheat & jaggery and mixed with aromatic spices & eggs.

Ingredients:

Dry Ingredients

Whole Wheat Flour- 11/2 Cups / 250 gms
Baking Soda - 1 tsp
Baking Powder - 11/2 tsp
Cinnamon Powder - 1 tsp
Cloves Powder - 1/2 tsp
Cardamom Powder - 1/2 tsp
Dry Ginger Powder - 1/2 tsp
Nutmeg Powder- 1/2 tsp
Salt - 1/4 tsp

Wet Ingredients

Jaggery - 2 Cups / 400 gms
Water - 1 Cup

Pumpkin Puree - 11/4 Cups / 280 gms
Coconut Oil - 1/2 Cup / 125 ml
Eggs - 3

Preparation:

1. Take jaggery in a pan and heat with 1 cup of water until the jaggery is dissolved completely. Then filter the jaggery to remove impurities if any. Cool down slightly.
2. In a mixing bowl, add eggs and beat well.
3. Add coconut oil, pumpkin puree, and filtered jaggery water.
4. Mix well.
5. Place the sieve over the mixing bowl, all the ingredients mentioned under the dry ingredients table and sift everything.
6. Now, mix the batter well without any lumps.
7. Pre-heat the oven at 350degreeF for 10 minutes or so.
8. Place the cupcake liners in the cupcake pan.
9. Fill half of each of the cupcake liners with batter.
10.Bake the cupcake for about 22 to 25 minutes.
11. Take out from the oven and cool down completely.
12. Yummy & healthy pumpkin spice cupcakes ready now. Enjoyyy!!!
