Oven Baked Chipotle BBQ Chicken

Ingredients:

4 to 5 pounds bone-in chicken parts or quartered whole chicken
3 ounces tomato paste
2 tablespoons spicy mustard
4 chipotle peppers in adobe sauce
3 tablespoons cider vinegar
2 tablespoons brown sugar
1 teaspoon salt
2 cloves crushed garlic
1 teaspoon ground cumin
1 teaspoon black pepper
1/2 cup olive oil

Preparation:

Mince the peppers finely and keep any seeds and excess sauce. Combine all the ingredients, except the chicken, and mix until smooth. Apply the mixture to the chicken in a thin, even coat. It should be sticky enough to adhere evenly without much effort just by turning everything in a bowl together. If it needs to be thinned to cover all the chicken, you can add a little water or more olive oil, but there’s plenty of flavor with this ingredients list not to need to expand it.

Once coated, put the chicken in a 375 degree preheated oven and bake until the chicken gets to an internal temperature of 155, usually about 45 – 50 minutes. With the bones in, a ten minute resting period is enough for the temperature to climb and finish cooking the meat throughout so you end up with a juicy result.
