Mom’s Famous Loaded Carrot Cake With Maple Frosting

About the dish: This recipe is a staple at birthdays and holidays! Everyone looks forward to this carrot cake loaded with fruit and nuts! My mother has spent years developing this recipe and seems to add a new ingredient each time, it's always a surprise!

Ingredients:

Carrot Cake
2 C sugar
3 1/2 C flour
1 C almond flour
1 Tbsp baking soda
1 Tbsp baking powder
1 Tbsp cinnamon
1 Tbsp nutmeg
1/2 tsp salt
1/2 C buttermilk
1 1/2 C melted coconut oil
1 C applesauce
2 eggs
4 C shredded carrots
1 C chopped walnuts
1 C golden raisins
1 C crushed pineapple, drained


Maple Frosting
1 ½ C butter, softened
1 ½ C shortening, room temp
1 Tbsp vanilla
3 boxes (1#) powdered confectioners sugar
¼ - ½ C non milk
1/4 C chopped walnuts (for garnish)

Preparation:

Preheat oven to 350
Grease two 9 inch cake pans
Mix dry ingredients in the bowl of a stand mixer on low until well combined
In a separate bowl mix oil, applesauce, and eggs
Add milk and oil mix to dry ingredients
While mixing on low add carrots, walnuts, raisins, and pineapple
Mix on low, careful not to over-mix
Separate evenly into two greased cake pans
Bake at 350 for 50 minutes

To make frosting:
Cream butter, shortening, and vanilla in the bowl of a stand mixer on low
Slowly add the powdered sugar with the mixer on low
Beat well to combine
Add ¼ C milk and beat well
Add more milk if necessary to reach desired consistency
Beat well on medium speed for 2 minutes

The frosting should move slightly when the mixer is stopped
If it does not move it will be too hard to spread, if it gives the appearance of melting off the paddle of the mixer it will melt off of your baked goods

Add more sugar to thicken, more milk to thin

Spread frosting on cooled cake and top with chopped walnuts
