Grilled Italian Wings with Roasted Garlic Lemon Vinaigrette

About the dish: I created this summer favorite for my big Italian family.

Ingredients:

Marinate Wing Ingredients
• ½ cup Lemon Juice
• ½ cup Wing Sauce
• 2 tbl Red Wine Vinegar
• 1 tbl Oregano
• 1 tbl Black Pepper
• 1 tbl Salt
• 1 tsp Crushed Red Pepper
• 1 cup Water
• 1 tbl Chopped Garlic
• 4 # 32 pieces of Wings
Dressing Ingredients
• 3 Cloves of Roasted Garlic
• 2 Egg Yolks
• 3 tbl White Wine Vinegar
• Juice of 1 Fresh Lemon
• 1 pinch of Black Pepper
• ½ cup Olive Oil or the Oil from the Roasted Garlic

Preparation:

Marinate Wing Instructions:

Marinate the chicken wings for 24 hours. Remove from liquid then lay them on a sheet pan. Bake the wings for 35-40 minutes at 350 degrees. Let them cool and then grill until slightly charred.

Dressing Instructions:

Add all the ingredients (except the olive oil) in a food processor until its smooth. Add the oil slowly until it emulsifies. Then either drizzle the roasted garlic lemon vinaigrette over the wings or use it as a dipping sauce.
