Fried Tomato And Cabbage

About the dish: I have fried green and red tomatoes laid out flat on the plate topped with cooked cabbage with bacon and shallots. For a dressing I made a bleu cheese sauce.

Ingredients:

Cabbage head 1/4 head (sliced thinly)
Bacon slices 4 each (diced)
Shallots 2 cloves (minced)
Bleu cheese 1/2 cup
Heavy cream 1/2 cup
Bread crumbs 1 cup
Eggs 2 (mixed well)
Red tomato 1 each
Green tomato 1each
Vegetable oil as needed
Salt and pepper to taste

Preparation:

Start off with 2 medium mixong bowls. One will have the eggs whipped nicely and the other will have the bread crumbs. Have a medium sized skillet with vegetable oil half filling the skillet on a large burner. Leave that to the side for now.

In another skillet turn onto medium to high heat. Add 2 tbl of olive oil. Add your shallots and bacon and let them cook until bacon is a light brown and the shallots are translucent. Then add in your cabbage and turn your heat down to medium. You don’t want to burn the bacon or cabbage. If it looks a little dry add water 1/3 of a cup at a time. You don’t want them mushy as well.

As that cooks down, turn the skillet with oil on to medium to high heat. Put your sliced tomatoes into the eggs and stir very well you want them very well covered. You can do one at a time or as many as will fit. When covered put them into the bread crumbs and cover very thoroughly. The oil should be ready. Add tomatoes in oil, do not layer. With your tongs be prepared to flip they don’t take long.

When done put on plate with paper towels. The towels will soak up the extra oil. Turn cabbage on warm or off, as that mixture should be done. Remove both skillets from heat.

In a small sauce pan, and burner on medium heat, add the bleu cheese and heavy cream into sauce pan and slowly stir as it melts. When done remove from heat. Start plating… a layer of tomatoes then a heaping spoonful of the cabbage mix. Then lastly add the bleu cheese to your liking.
