Elizabeth’s Gluten Free Supreme Pizza

Submitted by Elizabeth Landis

About the cook: I love to cook. But I have serious food allergies so I have to make my own recipes.

About the dish: A nut free, grain free pizza. Because my family loves pizza and can't eat the commercial kind.

National Origin: Italian

Serves: 6

Estimated Time: 30 to 60 Minutes

Ingredients:

Pizza crust
1/4 cup banana puree mix (1 banana and just enough water to blend)
1/3 cup oil
1 egg
1 tsp baking powder
1 1/2 tsp salt
1 5/8 cup tapioca starch

Toppings
Pizza paste (1/2 cup tomato paste, 2 tsp sugar, 1/2 tsp salt, basil and oregano to taste)
2/3 cup ball peppers sliced and lightly sautéed
1/2 cup onions fajita style
6 button mushrooms thinly sliced
1/2 cup sausage crumble
1 cup cheese

Preparation:

Preheat oven to about 400ºF

Lightly grease a 14″ in. pan and set aside

In a small mixing bowl mix together your wet ingredients

Stir in your dry ingredients

Press on to pizza pan

Bake the crust for 15 min remove from oven add the toppings and bake for an additional 5 min

Notes: Do NOT over grease the pan. If your dough is too sticky to handle add a Tbs of starch at a time if it is too dry add a Tbs of oil at a time

  1. I got to eat the piece shown and can testify that it is good. No one can ever guess that it is made with bananas. I think it tastes better than conventional.
