Clean Eats Brussel Sprout Bacon Salad

About the dish: A fabulous side dish salad that is SURE to win over the crowd. You can't beat this homemade, clean eating salad that is packed with nutrients and full of flavor!

Ingredients:

Ingredients:
1 cup chopped nitrate free bacon (low sodium if possible)
2 cups chopped Brussel Sprouts
4 green onions chopped
2 large carrots
1/3 cup dried cranberries
½ cup chopped almonds

Dressing Ingredients:
½ cup plain Greek yogurt
¼ cup light mayo or Vegenaise
3tbs honey
¼ cup apple cider vinegar
¼ tsp garlic powder
¼ tsp sea salt

Preparation:

Instructions:
First, cook bacon according to package directions, chop and put aside. Next, chop Brussel Sprouts, green onions, and almonds. Next, shred carrot. Another option is to put those ingredients in your Ninja and blend well till everything is diced into small pieces. Once everything is chopped, put all ingredients in a bowl, including bacon and dried cranberries.

For the dressing, put all ingredients in blender and mix well, or mix by hand. Drizzle dressing over salad and mix well with tongs or a large spoon. Chill for at least an hour before serving. Because this salad has firm Brussel Sprouts, it will last up to a couple of days. Just pour dressing sparingly if you plan on saving it to avoid too much liquid.
