Afrodita Chicken

About the cook: I've been cooking for about 2 years. I get my inspiration from my Latino husband who has been cooking with his mom since he was a child.

Ingredients:

2 Large boneless skinless chicken breasts
11/2 Small apples cubed and cored
1/4 cup of apple juice
1/8 cup extra-virgin olive oil
 1/8 cup lime juice, plus the zest of 1 lime
1 tablespoons mild honey
 1/2 teaspoon salt

Preparation:

Preheat oven to 350°F
Spray small nonstick skillet with cooking spray.
Heat on medium-high heat.
Add chicken; cook 3 minute on each side or until lightly browned on both sides.
Remove from heat. Then spray a small square cake pan and move the chicken to this pan.
Place apples around sides of chicken.
In a small bowl whisk the olive oil, lime juice , lime zest, honey and salt together; pour over chicken.
Then add the apple juice around the chicken.
Bake 45 to 50 minutes. Cover with foil for the first 25 minutes. You
