White Chocolate BBQ Pistachio Cherry Fudge

3 10-ounce packages white chocolate chips
1 1/2 14-ounce cans sweetened condensed milk
2 tablespoons unsalted butter
1 tablespoon pure vanilla extract
1/2 cup BBQ flavored pistachios
1 cup dried bing cherries
Coat a 9 x 12 x 2″ baking pan with nonstick cooking spray
Place white chocolate chips and sweetened condensed milk in a microwave-safe bowl. Microwave on medium for 5 minutes. Remove bowl from microwave and stir until chocolate chips are completely melted and mixture is smooth.
Cut 2 tablespoons butter into small bits, stir into white chocolate mixture until completely melted and blended in. Stir in vanilla extract, pistachios and dried bing cherries.
Use a spatula to spread the fudge mixture in the prepared pan. Allow to sit overnight to harden. Cut into 24 servings.
