Sweet Drop Biscuits – Keto/Low Carb

About the cook: Diagnosed Type 1 diabetic after the birth of my second child, my life completely changed. I quickly learned that food had a dramatic impact on my health so I ditched the sugar and carbs for good. With a passion for cooking and a desire for great tasting meals I began re-creating my favorite classics to fit our low Carb lifestyle. I am living my best life filled with flavor.

About the dish: Low Carb slightly sweet biscuits created to support our low carb Type 1 Diabetic lifestyle. We love these as shortcakes or served warm with butter in the morning.

Estimated Time: Under 30 Minutes

Ingredients:

1 cup of almond flour
1 ½ tsp baking powder
2 tablespoons of mayo (secret ingredient)
2 tablespoons of coconut flour
1 tablespoon for sweetener of choice- I use swerve confection sugar
3 tablespoons of heavy cream
1 egg
Pinch of salt
1 tablespoon of melted butter

Preparation:

Instructions
Preheat oven to 375
Line baking sheet with parchment paper
In a mixing bowl, combine all dry ingredients and mix
Add mayo, cream and egg, mix until well combined
Drop about a ¼ cup of dough onto parchment lined baking sheet, repeat for the remaining dough (4 biscuits)
Drizzle each dough biscuit with your melted butter
Bake for 15-18 minutes
