Sausage and veggie bake

About the dish: Quick to put together. Layered veggies and sausage. Makes the whole house smell fabulous.

2 medium zucchini
3 large tomatoes
1 lb. ground sausage
8oz mozzarella pearls
1/8 cup parmesan
salt, pepper, onion powder & garlic powder
Preheat oven to 375
spray 3.5 quart Dutch oven with non stick spray (olive oil)
slice zucchini length-wise and tomatoes about 1/4 inch thick. Season veggies with salt, pepper, garlic & onion salt.
Divide all ingredients in thirds.
Start with zucchini in layers, tomatoes, ground sausage & mozzarella pearls make 3 layers.
Top with parmesan cheese. Bake with lid on for 45 minutes. Uncover and bake for another 15 to light golden brown.
** cook note. Depending on the water content of the veggies when you uncover you may want to check for excess liquid and pour off.
