Orange accented tasty Miso Potato

About the cook: I have moved from Japan to live in California wine country with my husband. I like to combine Japanese and California food culture. My food inspiration is basically California food ingredients cooked with Japanese condiments.

About the dish: My family favorite "Miso" flavor dish! Often see on the table at home.

Estimated Time: Under 30 Minutes

Ingredients:

2 lb (24oz) Fingering Potatoes
3 tablespoons 100% Orange juice
1 tablespoon Mirin (Rice wine)
2 teaspoons Sugar
1 tablespoon Soy sauce
2 tablespoons Miso
2 teaspoons Butter (unsalted)
1 teaspoon Vegetable oil
1 teaspoon Garlic, chopped
1/2 teaspoon Rosemary
2 teaspoons Chives, chopped

Preparation:

① Rinsed potatoes, then place in microwave and heat on high for 5-8 minutes.
②Prepare mixing bowl, place 100% orange juice, mirin, sugar, soy sauce and miso
Into bowl and mix well.
③ Heat skillet on medium heat, put oil in the pan. Add garlic to cook.
④ Add potatoes, butter and ②, reduce until thicken and potatoes is caramelized and coated.
⑤ Place potatoes on plate, sprinkle rosemary and chives then serve it.
