Ivy gourd stir fry

About the dish: Kovakkai (Ivy gourd) is a famous vegetable across India. In this method, we are going to stir fry kovakkai and add a coarse powder which brings unique flavor to the fry.

Ingredients:

Tindora/Kovakkai – 1 cup
Cumin seeds – 1 tsp
Coriander seeds – 1 tbsp
Urad dal – 1 tbsp
Channa dal – 1 tbsp
Dry red chillies – 3
Turmeric powder – 1/4 tsp
Salt to taste
Oil

Preparation:

Step 1: Dry roast cumin, coriander seeds, urad dal, channa dal and dry red chillies in low flame for a minute or two. Cool it and grind to a coarse powder.
Step 2: Heat oil in a pan, add ivy gourd and saute for 2 mins. Then add turmeric, salt, 2 tbsp water cover lid and cook for 10 mins stirring occasionally.
Step 3: Remove lid, add the coarse powder and stir well. Cook for 2 mins.
Step 4: Ivy gourd stir fry is ready. Serve with rice, roti.
