Date Jam

About the cook: I live in Murfreesboro, TN and I love to cook for my family and neighbors. I have 3 dogs, 3 cats, 2 kids, and lots of friends.

About the dish: We use this jam for morning pastries, pizza sauce, cheese trays, and biscuits. It's especially good paired with goat cheese.

Estimated Time: Under 30 Minutes

Ingredients:

12 ounces dried, pitted dates; sliced roughly
1.5 cups red wine
1.5 cups balsamic vinegar
1 spring rosemary leaves
3/4 cup brown sugar
pinch salt
1/2 tsp red pepper flakes
water as needed

Preparation:

Simmer everything together until liquid is the same level as the fruit.
Blend together in blender or stick blender.
Use water as needed for consistency.
