About the dish: We use this jam for morning pastries, pizza sauce, cheese trays, and biscuits. It's especially good paired with goat cheese.

12 ounces dried, pitted dates; sliced roughly
1.5 cups red wine
1.5 cups balsamic vinegar
1 spring rosemary leaves
3/4 cup brown sugar
1/2 tsp red pepper flakes
water as needed
Simmer everything together until liquid is the same level as the fruit.
Blend together in blender or stick blender.
Use water as needed for consistency.
