Crispy Asian Chicken Lettuce Wraps

About the dish: A few weeks back, I made these for a bridal shower (except instead of using classic Iceberg Lettuce, I shrank it down and used endive leaves, which was the cutest thing ever) and the women devoured these things faster then I could make them! They couldn't stop raving about how great they where! Little did they know that this was the easiest dish I made that day. I love this dish for several reasons but mainly because its easy, a great 'make ahead' dish (perfect for summer time use), and it's obviously delicious and very unique in flavor

2 Chicken Breasts (Seasoned, Grilled, Finely Chopped)

1/3 Cup Red Onion (Finely Chopped)

1/4 Cup Cilantro (Finely Chopped)

3/4 Cup Mr. Noodle (Chinese Style Steam Fried)

1/2 - 1 Cup Peanut Saute Sauce (see note at bottom)

1 Iceberg Lettuce Head (Chopped in half)

Garnish:

Sweet Chili Thai Sauce

Peanuts

Preparation:

Method:

In a large bowl, add chicken, onions, cilantro, and noodles

Add enough Peanut sauce to generously coat, however don’t over do it. You don’t want it too dry but you don’t want it overwhelming either

Gentle toss with tongs until well mixed

Add desired amount of Sweet Chili Thai Sauce to the bottom of your lettuce leaf. Lettuce can be very delicate, so ensure you’re not man handling that little leaf. A tablespoon or two of the sauce should do it.

Carefully add about 1/4 Cup of your prepared filling on top of the lettuce leaf ensuring not to overfill.

Top with a few peanuts

Serve with some additional Sweet Chili Thai Sauce and Voila! Dinner is ready! Perfect for the Spring/Summer Dinner Menu! Left overs are great too! Make your life even easier and prepare the filling a day ahead, that way when you get home from that long day its as simple as stuffing some lettuce leaves!

Peanut Sauce Note:

Some Peanut Sauce’s have a coconut flavor to them (like the one in these pictures). I’m not a huge fan of Coconut.. at all. Safeway Signature has a Peanut Sauce available in their ethnic foods isle that was amazing for these wraps. Whatever Peanut Saute Sauce you choose to use, check the ingredients on the back of the bottle to determine if there’s Coconut or not.
