About the cook: I like to cook and bake. I'm a museum professional and adjunct teacher. I also like to travel and sew.

About the dish: This recipe was a breakfast compromise. I wanted French Toast and my husband wanted a fried banana sandwich. This is the amazing combination of the two.

National Origin: American

Serves: 4

Estimated Time: Under 30 Minutes

Ingredients:

1 1/2 cups milk, warmed
1 tbsp butter melted+ more for pan
2 eggs, beaten
1/4 tsp salt
2 tbsp brown sugar
1 1/2 tsp vanilla extract
1/2 tsp cinnamon
8 pieces of good quality white bread
2 large bananas sliced
1/3 cup chocolate chips (or more as desired)
1/4 cup almond butter
1/4 cup maple syrup (or more as desired)

Preparation:

Warm a large skillet on medium-high and melt some butter in the pan. Prepare the French toast dip using the first 7 ingredients. Make sure the butter is melted and the milk is warm before combining. Dip bread slices in French toast dip and place in hot pan. Cook on one side until browned and then flip. While still cooking spread almond butter, banana and chocolate chips on the already browned side of 4 of the bread slices. When done browning all slices remove the four topped slices and place on a plate. Then top with remaining 4 slices. Drizzle with maple syrup before serving.
