Best Cookies Ever

About the cook: My name is Kristen, I'm a chef, owner/operator of my own catering company, wife, mom, teacher, lunch lady, maid...basically all the the things! I have been with my husband since we were 16 and we have been married for 11 years. We have 2 amazing daughters who keep me extremely busy, but I wouldn't have it any other way.

About the dish: My husband named these cookies! I made them for a camping trip a million years ago and I wanted something that had double duty, so the bacon breakfast cookie was born! Bacon chocolate chip cookies are great for breakfast or any time of day!

Ingredients:

8 slices of bacon, cooked and chopped
1/2 Cup butter, room temp
1/4 Cup bacon fat, cooled to room temp
1 Cup brown sugar
1/2 Cup white sugar
2 whole eggs, plus 1 egg yolk
2 tsp. vanilla
1/2 tsp. salt
2 1/4 Cups flour
1 tsp. baking soda
1 tsp. baking powder
2 Cups chocolate chips

Preparation:

Cook bacon strips and rough chop, reserve 1/4 cup of bacon fat and put in fridge to cool. Set bacon aside to cool. Once bacon fat is cooled, add 1/2 cup room temp butter and both kinds of sugar to mixing bowl. Mix on medium-high until light and fluffy (about 2 minutes). Add eggs and egg yolk, vanilla and salt to butter mixture and continue mixing on medium-high until fluffy (about 2-3 more minutes). In a separate mixing bowl whisk together the flour, baking soda and baking powder. Add flour to the butter mixture and mix on low speed until just combined. DO NOT over mix!! Hand mix in the bacon bits and chocolate chips. Scoop rounded spoonfuls onto ungreased baking sheet. Bake in preheated oven (350 F) for 8-10 minutes. Transfer to wire rack to cool completely. Enjoy for breakfast or snack!
