Beef and Artichoke Salsa Tacos

About the dish: This is a low fat, low carb, delicious and easy taco.

Ingredients:

1 pound sirloin
2 limes
1 tablespoon chili powder
2 teaspoons salt, divided
1 can (14 ounces) quartered artichoke hearts, drained and chopped
1 cup chopped fresh tomatoes
1/4 cup chopped onion
1/4 cup chopped cilantro
8 flour tortillas

Preparation:

Thinly slice beef. Squeeze juice from 1 lime over beef. Mix chili powder with 1 teaspoon salt, add to slices of beef and toss. Let meat rest while preparing salsa. For salsa, mix artichokes, tomatoes, onion and cilantro. Squeeze remaining lime over salsa, toss and season with remaining salt. Heat a heavy skillet to medium-high heat. Cook beef until browned; 6-8 minute. Warm tortillas and fill with slices of beef topped with salsa.
