
Apricot Mostarda

About the dish: This recipe is amazing served on a cheese platter or alongside chicken or pork. It adds a savoury sweet zip that really elevates other foods.

Ingredients:
1/2 cup sherry vinegar
1 tbsp yellow mustard seeds
1/4 cup finely diced red onion
1 tsp pepper
1/2 tsp salt
1 tsp red chilli flakes
1 tbsp Dijon mustard
2 tbsp maple syrup or honey
2 tbsp olive oil
1 1/4 cup finely diced dry apricots
Preparation:
1) in a small saucepan combine the first 8 ingredients and heat until it simmers.
2) mix in the olive oil
3) put the apricots in a glass jar and pour the mixture over them. Give a good stir.
4) let sit at room temperature for an hour, then seal and place in the fridge.
5) enjoy with any kind of cheese and bread or on top of grilled chicken or pork chops.
6 this will last in the fridge for weeks on end.
