Spicy Shrimp and cucumber with fish sauce

About the cook: My name is Irene ,mother of 2. I'm a homemaker . Just like the saying 'cooking is the love made visible' yes it's definitely for me it's my love . I love , enjoy cooking healthy food for my family , friends and everyone who comes over our house . Since childhood I'm interested in cooking , i used to watch my mom cooking delicious food and my dad always appraised my mom's for making droolworthy food with her magic hands that 's how my passion developed . My husband enjoys my food and he also encourages me to make my own creations , until now it came out well . I feel so much happier when my toddler says mama' i like it' , to the food i make ( she doesn't say that to all food ) . I watch lots of recipe videos , read blogs i inspire each and everyone of them . My dreams are to have my own blog and to publish my own cookbook, hopefully one day... About the dish: When watching my kids playing suddenly i craved for Thai food , then i thought why not make it indo Thai so i planned in my head how to make it , here u go . It came out well , i could smell the masalas still even after 2hrs of making it .

Ingredients:

Shrimp 1/2 cup
Paprika 1tspn
Cayenne 1tspn
Fenugreek powder 1/4 tspn
Pepper powder 1tspn
Fish sauce. 2 tblspn
Red curry paste. 3/4tspn
Cucumber. 1/4 cup diced or sliced
Green chily 1no
Cashews. 4-5 nos
Onion 1/2
Garlic cloves 2no.s
Sesame oil 2tblspn
Salt. Required
Chicken broth 2tblspn

Preparation:

Marinate the well cleaned shrimp with Cayenne pepper, paprika, fenugreek powder, pepper powder , curry paste and 1tblspn fish sauce , keep it aside for 5-10mins

In a pan pour 1tblspn of oil and fry shrimp on both sides for 3-4 mins on medium flame and take it out and keep it aside
In the same pan pour rest of the oil and add diced onion and green chili saute until transparent now add the chopped garlic cloves , saute for few secs now add the cucumber and saute for another 10secs and then add the rest of the fish sauce and chicken broth ,close with a lid and keep when the liquid almost reduced add the fried shrimp and mix it well for another 2-3 mins , check for salt add if needed . Serve with rice ( i prefer Jasmine rice )
