Vegan Pistachio Hummus Slaw

Submitted by ERICA RIDDLE

About the cook: I'm a baker and food blogger who is nearly a year into becoming a plant-based eater. I love coaxing flavors from fresh veggies and fruit!

About the dish: This slaw is a healthy departure from regular mayo-based slaws. The combination of hummus and yogurt makes a light, yet satisfying dressing. This slaw makes a great side or sandwich topping.
