
Vegan Pistachio Hummus Slaw

About the dish: This slaw is a healthy departure from regular mayo-based slaws. The combination of hummus and yogurt makes a light, yet satisfying dressing. This slaw makes a great side or sandwich topping.

Ingredients:
2 Tbsp hummus (homemade or your favorite brand)
2 Tbsp soy or almond non-dairy yogurt
1/4 c fresh chives, chopped
1/4 head green cabbage
1/4 head red cabbage
1/2 c dry roasted, pistachios (salted or unsalted), chopped
salt
pepper
cayenne
Preparation:
Finely shred the cabbages and set aside.
In a large mixing bowl, combine hummus, yogurt, and chives. Mix well and season to taste with salt, pepper, and cayenne.
Add cabbages to bowl with hummus-yogurt dressing and stir to coat.
Add pistachios and mix well.
Taste again and adjust seasonings.
Refrigerate for 20 minutes before serving.
