Spicy Sesame Basil Chicken

Ingredients:

1 lb. chicken, cubed
¾ chopped basil
4 large garlic cloves, diced
½ red onion, chopped
1 Tbs. rice vinegar
1 Tbs. chili powder
2 Tbs. coconut sugar
1/8 tsp. red pepper flakes
¼ tsp. sea salt
2-3 Tbs sesame oil for cooking

Preparation:

In a frying pan, heat the sesame oil on low-to-medium. Add the diced garlic and onion, and cook for a few minutes, until translucent. Then, add the chicken and the rest of the ingredients EXCEPT the fresh basil. Mix well and cook for 7-10 minutes, until the chicken is cooked and no longer pink. Turn off the heat and stir in the fresh basil. Serve with brown rice and roasted or stir-fried broccoli for a great, well-rounded dinner that hits the spot with TASTE!

Recipe Tidbit:
Basil is SO awesome! You can use fresh basil leaves in many recipes; from pasta salads to turkey burgers and chicken dishes, basil adds great flavor to any dish. I usually buy my fresh basil at Trader Joe’s because they sell a larger package than the grocery stores and I tend to use the basil in two recipes for the week. For example, I would make Spicy Sesame Basil Chicken one night and, a few nights later, a basil feta turkey burger. The flavor is rich, and the kids have grown to love it!
