My side business is called Endurance Fit For Life and my goal is to promote a healthy lifestyle for the whole family. I have written three cookbooks, which focus on simple, healthy recipes and easy to make. My website and social media has a link for hiking/biking trails in Orange County that give details on where to park, sights you will see on the trails, and other info. Overall, my goal to to help simplify healthy cooking in the kitchen with giving others recipe ideas that will keep them and their families healthy!

National Origin: American

Serves: 4

Estimated Time: Under 30 Minutes

Ingredients:

1 lb. chicken, cubed
¾ chopped basil
4 large garlic cloves, diced
½ red onion, chopped
1 Tbs. rice vinegar
1 Tbs. chili powder
2 Tbs. coconut sugar
1/8 tsp. red pepper flakes
¼ tsp. sea salt
2-3 Tbs sesame oil for cooking

Preparation:

In a frying pan, heat the sesame oil on low-to-medium. Add the diced garlic and onion, and cook for a few minutes, until translucent. Then, add the chicken and the rest of the ingredients EXCEPT the fresh basil. Mix well and cook for 7-10 minutes, until the chicken is cooked and no longer pink. Turn off the heat and stir in the fresh basil. Serve with brown rice and roasted or stir-fried broccoli for a great, well-rounded dinner that hits the spot with TASTE!

Recipe Tidbit:
Basil is SO awesome! You can use fresh basil leaves in many recipes; from pasta salads to turkey burgers and chicken dishes, basil adds great flavor to any dish. I usually buy my fresh basil at Trader Joe’s because they sell a larger package than the grocery stores and I tend to use the basil in two recipes for the week. For example, I would make Spicy Sesame Basil Chicken one night and, a few nights later, a basil feta turkey burger. The flavor is rich, and the kids have grown to love it!
