Spiced Orange Rice

About the dish: I make lemon rice often which is a common variety of rice in my country. Once I thought, why can’t I try the same with oranges and made this recipe. This is a very flavorful food with a little sweetness. Now we can use oranges for savory dish too. A great way to use your leftover rice.

Ingredients:

Juice extracted from 3 medium size oranges
Cooked white rice- 4 to 5 cups
Chopped onions- 1/4 cup
Grated ginger - 1 tsp
Peanuts / cashew nuts - 3 tbsp
Green chilli- 1 ( or as per your spice level)
Salt to taste
Chopped cilantro - few
Oil - 2 tbsp ( Any oil)

Optional Ingredients:
Turmeric powder - 1 pinch ( For color )
Mustard seeds - 1/4 tsp
Split chickpeas- 1/4 tsp
Curry leaves - few

Preparation:

In a pan, add 2 tbsp oil. When oil is hot add the ingredients under optional ingredients (if using). Add peanuts / cashews and toast till golden grown. Then add chopped onion and green chilli. Sauté well till onions are cooked well. Then keep the flame low, add grated ginger, orange juice and needed salt. Cook the juice until it thickens. Now add the cooked rice In 3 portions and mix well. This step is to avoid mixing too much of rice. Switch off the flame. Garnish with chopped cilantro. I like to serve the rice with some roasted potatoes.
