Mini Red Velvet Nutella Cream Filled Cookies

Ingredients:

Makes 12-16 Mini Cookies and Filling.
Ingredients for Filling:
1 - 13oz - Nutella Hazelnut Spread
1 - 8oz - Cream Cheese
1 - 8oz - Frozen Cool Whip(Frozen)
1/2 Tsp - Vanilla Extract

Ingredients for Cookies:
1 Cup - Granulated Sugar
1 Stick (1/2 Cup) - Unsalted Butter
1 Egg
1/8 Cup - Buttermilk
1/2 Tsp - Vanilla Extract
1/8 Cup - Red Food Coloring
1 3/4 Cup - All-Purpose Flour
1/2 Tsp. Baking Soda
1/2 Tsp. Salt
1/8 Cup – Unsweetened Cocoa Powder

Decoration: White Cupcake Gems (shown in picture).

Preparation:

DIRECTIONS:
FILLING:
• Combine – Nutella, Cream cheese, Vanilla Extract. Whip together until well blended.
• Fold in Cool Whip till combined.
• Refrigerate

COOKIES:
• Preheat Oven at 350 degrees.
• Line a baking sheet with Parchment paper.
• In a bowl cream Sugar and Butter.
• Then Mix in Egg, Buttermilk and Vanilla Extract.
• Stir in Red Food Coloring – set aside.
• In a new bowl – Whisk; Flour, Baking Soda, Salt, and Unsweetened Cocoa Powder.
• Combine dry and wet ingredients –batter will be sticky. If too sticky use butter or Pam for hands/scoop.
• Using a Tablespoon – scoop out dough and roll into a ball – this will make the cookie look smooth.
• Place cookies – 2 inches apart on baking sheet.
• Bake 6-8 minutes.
• Remove from oven – let cool on pan for 1-2 minutes then move to cooling rack.
• Remove Filling from Refrigerator – either fill a piping bag or spoon filling onto flat side of the cookie, fill, add top cookie to complete. Repeat.
• Roll completed cookies into White Cupcake Gems or any sprinkle of your choosing.
• Refrigerate for a couple of hours till firm.
• Store in Refrigerator.
• Enjoy!
