Easy, Healthy Sloppy Joe’s

About the cook: I am a wife, mom of two boys, and a part-time middle school teacher who teaches a Farm to Table cooking class/Health and PE. My side business is called Endurance Fit For Life and my goal is to promote a healthy lifestyle for the whole family. Ingredients:

Ingredients:
1 ½ lbs. organic, lean, ground red meat
1 cup shredded zucchini
½ cup shredded carrots
1/3 cup diced red onion
1 can of organic tomato sauce
2 Tbs. apple cider vinegar
3 Tbs. organic ketchup
3 Tbs. coconut aminos (or low-sodium soy sauce)
1 ½ tsp. chili powder
½ Tbs. garlic powder
¼ tsp. sea salt
1 Tbs. olive oil

Preparation:

Put olive oil in a frying pan and heat on low-to-medium heat. Cook the diced red onion for a few minutes, until translucent. Then, add the ground meat and cook for 6-8 minutes. Shred the zucchini and carrots. Place a paper towel over the shredded zucchini to remove excess moisture. Add the shredded veggies and remaining the ingredients to the meat, and cook everything for another 3-5 minutes until the meat is no longer pink and the veggies are softened.

Enjoy Easy, Healthy Sloppy Joe’s on a gluten-free roll or bun with optional mozzarella sprinkle. The sweet and tangy flavor also fills the tummy.
