CHICKEN, APPLE, AND BACON CAROLINA PASTA SALAD in CUCUMBER BOWL

About the dish: This pasta salad not only tastes great, but looks so good! Great summer dish, but can be served year-round. You place the pasta salad inside a thin slice of LONG cucumber (looks like a bowl).

Serves: 6

Estimated Time: 30 to 60 Minutes

Ingredients:

1 - 12 oz box Rotini Pasta
1 - large Golden Delicious Apple (peeled, cored and cut into small pieces)
1 stalk celery, cut into small pieces
1 Cup Rotisserie chicken, cut into small pieces
1 Cup large bacon pieces
Dressing:
1/2 Cup granulated sugar
1/2 tsp salt
1/2 tsp celery seeds
1/2 cup Cider vinegar
1/3 Cup vegetable oil

Preparation:

Place cooked pasta, chopped apple, celery, and chicken into bowl. Refrigerate.

Cook the dressing: combine in saucepan sugar, salt, celery seeds, vinegar and vegetable oil. Bring to boil, stirring until sugar is dissolved. Remove from heat and pour over pasta, apples, chicken and celery. Refrigerate.

When ready to eat, stuff pasta salad inside a thinly sliced piece of LONG cucumber, shaping the cucumber to look like a bowl. Add large bacon pieces to top of salad. Serve on top of lettuce bed. ENJOY!
