Cherry Dutch Baby

Cherry Dutch Baby

I love pancake houses and often order the Dutch baby. At the local pancake house, the choices are a plain Dutch baby (spritzed with lemon juice) or an apple one. Cherries were in season here in Seattle and I thought to try making a Dutch baby using them as the fruit. But, I had to make it gluten-free so my husband could eat it, too.

Rocket Pop Sorbet

Rocket Pop Sorbet

Remember those Red, White, and Blue popsicles? Well, this sorbet is inspired by them, and is a great hot weather treat (not to mention being really pretty!). But, unlike the popsicles, this sorbet is made with no artificial colors or flavors, and it has a decidedly mature flavor profile. Fresh, tart, and herbal, this sorbet has 3 layers (strawberry-black pepper, lemon-sour mix, and blueberry-thyme) and the flavors all compliment each other.

Coconut Panna Cotta

Coconut Panna Cotta

This dairy free version of the Panna Cotta is a nice vegan alternative. The panna cottas can be prepared up to 2 days in advance and will need 8 to 12 hours to fully set.

Healthy Dried Fruit truffles

Healthy Dried Fruit truffles

This vegan truffle is a healthy alternative to the decadent chocolate truffle. The recipe can be modified and used as a torte, cake, entremet base, or shaped into a bar for a healthy snack; the possibilities are endless.

Note: the healthy dried fruit base can be prepared in advance and frozen for up to 3-4 months.

Blueberry Banana Cream Pie

Blueberry Banana Cream Pie

This is a no bake dessert we always have at Thanksgiving and Christmas. Any chance I need to bring a dessert to an event this is what I go with. At any given family function there are anywhere between 4-10 pies or more. It’s soo good and with an electric mixer its even better

Grilled French Toast Napoleon

Grilled French Toast Napoleon

Who doesn’t love French Toast? Especially Stuffed French Toast! But the fat & calories relegate it to a decadent breakfast treat we only allow ourselves on special occasions. My grilled version swaps butter for a scant bit of healthy olive oil. Substituting agave for white sugar & Greek yogurt for cream cheese also decrease fat & calories & increase health benefits. The vitamins in fresh fruit & a homemade strawberry balsamic drizzle seal the deal. No you can have French Toast whenever you want!

Mazanec (Czech Easter bread)

Mazanec (Czech Easter bread)

Mazanec is a traditional bread made in Czech Republic for Easter. A large, firm, crusty yeast-based bread, Mazenec is usually enjoyed for breakfast either plain or with fruit jam and/or butter. It is lightly sweetened, and includes subtle hints of vanilla and lemon, with rum soaked raisins and almonds, throughout.

Lake Placid Citrus Cheesecake Tart

Lake Placid Citrus Cheesecake Tart

Several years ago, my husband and I vacationed in the lovely town of Lake Placid, in New York state. There we found a traditional diner offering a delicious breakfast option of plain yogurt topped with grapefruit and orange segments, and nutty granola. That combination inspired this citrus cheesecake tart. The cheesecake portion is lightly grapefruit flavored, but I always include orange segments as part of the garnish.
