Baked Apple Raisin Hand Pies

About the cook: I am a retired registered nurse. My husband and I live in Hot Springs Village, Arkansas, a large retirement community. We spending several months each year traveling in our motorhome. This winter we spent three months in Tucson, Arizona. We have two daughters and four grandchildren.

About the dish: This is a simple dessert that is a healthier option than the fried pies.

Ingredients:

Pastry
1 1/2 cup all purpose flour
3 teaspoon baking powder
1 teaspoon salt
1/2 cup shorting
2 tablespoons sour cream
2 teaspoon vinegar
3 tablespoon water

Filling
3 medium apples
2/3 cup granulated sugar
1/2 raisins
1 teaspoon cinnamon

Preparation:

Pastry

Add shorting and sour cream to dry ingredients, using pastry blender, mix until like coarse cornmeal. Add vinegar and water, mix until workable, do not over mix. Let dough rest while preparing filling.

Filling

Peal and dice apples into small chunks, add sugar, cinnamon and raisins. Mix well

Heat oven to 375. Roll pastry into 6 in circles, add 2 tablespoons filling just off center. Moisten edges with water, fold and crimp edges with fork. Bake in 375 degree oven on lined cookie sheet for 40 minutes or until golden brown.
